Production method of wet figs

  • Planting and harvesting: Wet figs are grown in rainfed orchards, mostly on steep slopes, where they can benefit from the natural water harvesting and soil moisture retention. Figs are harvested in late summer. The harvested figs are then sorted and graded according to their size and quality.
  • Drying: The fresh figs are dried in the sun for about two to three days, until they lose about 70% of their moisture. The drying process helps to prevent spoilage and fungal infections, and also enhances the sweetness and flavor of the figs. The dried figs are then stored in baskets, covered with cloth or paper, to protect them from dust and insects.
  • Boiling: The dried figs are boiled in water for about 15 to 20 minutes, until they become soft and plump. The boiling process helps to rehydrate the figs and make them juicier and more tender. The boiled figs are then drained and cooled.
  • Packing: The most common model for packaging wet figs is to press them. This way, the air inside the figs is discharged and their shelf-life increases. For this reason, they also call wet figs pressed figs. The weight of pressed fig packages is 100,150,200 and 250gr.
